What’s the Story?

One of the top searches bringing people into this blog is “Leigh Peele Pics.” I also get accused of not being real, being extremely fat, and being a man. I just think people aren’t paying attention enough. I feel I have addressed this before, but here it is again. I also get a lot of questions about clients, who and where I train, where I have been published, etc. So, I decided to update my “about me” page. If this isn’t good enough, then you can also add me to your facebook. I try to keep friends and pictures private because people I don’t know (and motives I can’t always trust) have access to those things. I haven’t had the best of luck in that area so I sit on the side of caution with these things. That being said, there are a bunch of pictures in there, I just think people don’t know how to use facebook. It’s called a photo album people.

I will be announcing more about the consults soon as well, but I will say I am making a huge transition in my career for the next 6-12 months. From there, we will see. In the meantime, I hope this gives you a little more to chew on.  I even threw in a FAQ list at the end. These are the top questions people send me through email about what I do.

About Me Page Intro

I think to some degree you have to possess a bit of narcissism to have a truly excellent “about me” page. I don’t know if I am 100% there yet, but I do keep looking in the mirror and thinking “Wow, you are awesome.” In a nutshell, this about me page is going to attempt to give you a brief understanding of who I am. Easy Egg En Cocotte

There is something I love so much about cooking in a ramekin and everything being in one place. This is a perfect package that packs a huge flavor. It is also very easy to do and you can do more than one at a time. If making more than one at a time, increase the time in the oven the more you put in.

Ingredients:

Grams/Ounces

35 g mushrooms

40 g onions, chopped

57 g 99% fat free deli ham

7 g light butter

32 g fat free sour cream

1/8 tsp turmeric

1 large egg

2 large egg whites

1/8 tsp salt

1/8 tsp black pepper

1/8 tsp dried basil

Ingredients:

Cups/Spoons

1/2 cup mushrooms

1/4 cup onions, chopped

2 oz 99% fat free deli ham

1/2 tsp light butter

2 tbsp fat free sour cream

1/8 tsp turmeric

1 large egg

2 large egg whites

1/8 tsp salt

1/8 tsp black pepper

1/8 tsp dried basil

Directions:

1. Preheat the oven to 375 F.

2. In a medium sauce pan, melt butter over medium-high heat. Once melted add mushrooms, onions, and ham; cook for 5-7 minutes.

3. Mix ham and veggie mixture, sour cream, and turmeric together and put in large ramekin.

4. Add 2 egg whites and 1 egg on top of sour cream mixture. Season eggs with salt, pepper, and dried basil.

5. Place ramekin in a baking dish, and pour water into the baking dish until it is halfway up the sides of the ramekin. Carefully place the baking dish in the oven.

6. Bake eggs for 15 minutes, or until set.
Yields 1 serving

Entire Recipe: Calories- 247.95, Protein- 26.26 g, Fat- 10.39 g, Carbs- 12.35 g, Fiber- 1.07 g, Sodium- 838.03 mg

There exists different types of guilty pleasures. There are guilty pleasures we are allowed to enjoy. Guilty pleasures that so many people have surrendered to, it becomes a born again masterpiece. A few notable examples are, “Elton John – Bennie and the Jets”, “Katrina and the Waves – Walking on Sunshine” or anything touched by the wisdom of Hall and Oats.

This is not one of those guilty pleasure mixes.

No, this mix rips to the core everything you don’t want to admit liking. Songs so pathetic you think the sheer admittance of them will leave you alone for the rest of your life. The only hope you have after admitting you like this music is reality TV show dating. There is only one word to describe liking these songs – shame. It is okay, you are among friends. Cooks and Tips – Weighing Food Properly

A chief complain for people not wanting to cook is time. Cooking in bulk saves tremendous amount of time but some people are often left confused about how to store it. A question I receive a lot is, “Leigh, when I make a bulk batch of food, how to I separate it into portions?” This comes up a lot for things like chili, soups or large stir fry.
