Grams/Ounces 680 g chicken breast, skinless, boneless 1/4 tsp salt 1/4 tsp black pepper 28 g low fat bacon slices, chopped (14 g or 3 slices is 60-80 calories) 3 second spray non-stick cooking spray 48 g sliced onion 6 fl oz unsweetened apple cider 4 fl oz fat-free, less-sodium chicken broth |
Ingredients:
Cups/Spoons 4 (6-ounce) chicken breast, skinless, boneless 1/4 tsp salt 1/4 tsp black pepper 6 slices low fat bacon slices, chopped (14 g or 3 slices is 60-80 calories) 3 second spray non-stick cooking spray 1/4 cup sliced onion 3/4 cup unsweetened apple cider 1/2 cup fat-free, less-sodium chicken broth |
Directions:
1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or rolling pin. Sprinkle chicken evenly with salt and pepper.
2. Cook bacon in a large non-stick skillet over medium heat until crisp. Remove bacon from pan and set on a paper towel to dry.
3. Add chicken to drippings in pan and cook on medium heat; 6 minutes each side or until done. Remove chicken from pan and keep warm.
4. To same pan add onion and cook on medium heat for 2 minutes or until tender, stirring constantly. 5. Add cider and broth to onions and bring to a boil; scrap pan to get all ingredients. Cook for 5 minutes. Stir in cooked bacon; serve sauce over chicken.
Yields 4 servings

In the photo it looks like the chicken breast is sitting on….yellow squash? white potatoes? It’s a great presentation.
It is on a bed of scalloped potatoes. If you wanted to decrease carb intake/calories you could use squask or even a grilled spiced zucchini.
This looks delicious! Also it’s a really good example of how you can eat a meal that will fit into a high protein week (like week 4 of OPT) and easily add some sides to make it a “regular” meal for your family.
Absolutely. Like I said above you could put your families on a bed of potatoes and yours solo or with a variety of veggies.

WoW… very high caloric meal! Almost 1,000 calories. If you’re eating 5x a day I wouldnt want my last meal to be 1000 calories. Sounds delicious however!!!!
Dean I think you got a little confused. It is 943 for 4 servings. One serving is only 235 calories.
