Ice Cream Recipe:
CoCo Coffee Ice Cream – Leigh Peele
60g Protein Powder, Chocolate
22 fl oz Almond milk, Chocolate Unsweet
7 g Splenda (or 12 g regular sugar if don’t want to use artificial)
2 g xanthum gum
5 g instant coffee
10 g unsweet cocoa powder
3 packets of stevia
Directions:
1. Make sure your ice Cream maker is ready to use per factory instructions.
2. Place protein powder and milk into blend. Blend for 30 sec.
3. Add remaining ingredients and blend together for 1 min or until fully mixed and thick.
4. Transfer into ice cream maker and wait for ice cream to thicken. Depending on maker it is roughly 30-50 mins.
Yields 2 heaping servings
Calories: 215 Protein: 27 Carbs: 13. 2 Fat: 6.29

I’m looking to buy an ice cream maker because of this recipe. I’m wondering what size to get; does the protein ice cream keep in the freezer? Do you transfer to a plastic container or re-freeze in the ice cream maker container? I see 1/2 pint, 1 quart, 1.5 quart. Dunno if I saw 1 pint… I’m looking on eBay currently. My sister suggested that she likes the hand crank ones… Leigh or anyone: suggestions of brands and especially what size?
Oh, no kids, just me eating; and I am planning on using it for this great recipe (thanks, Leigh)! I do miss ice cream. a lot. So this recipe is for 1 pint? 1/2 pint?

It comes out like real ice cream. You store and save it the same way. You have to make sure it is very cold and clean before hand and sometimes it can get stuck to the sides a little more but just let it thaw a little and you can get it off the edged. I also recommend scrapping it out with a plastic scoop versus metal because the inside can be a little easy to scratch up.
I have know people to use other kinds and it works great. I would think the bigger the maker the less time it would take to make it.

here is a Protein Ice Cream recipe that I’ve used, which I found a couple years ago from MariAnne Anderson’s blog (she doesn’t update anymore). I usually use a different sweetener though. I blend it all in a blender and use an ice cream maker. It’s very good!
Chocolate Soft Serve Protein Ice Cream
For each “serving” of ice cream, you’ll need the following:
1 scoop chocolate whey
1/4 cup cottage cheese
1/2 cup H2O
2 frozen strawberries
2 level teaspoons Splenda
1 level teaspoon brown Sugar Twin
I made up a triple batch in the blender with water, then froze the whole thing in a large (750 ml – basically 3-cups) cottage cheese container, which it filled. When it was “mushy but not entirely frozen”, I took it out and food-processed it.
Perfect.
I think the best thing would be to make it up as a batch in an ice-cream machine, which I don’t have but am GOING to get.
The macros, per “serving”, NOT COUNTING the extra bullshit carbs from the extra sweetener…
32 g protein
9 g carb
2 g fat
162 calories
Great podcast Leigh! The 101 on Bulimia was great. I have never been bulimic, but have had disordered eating patterns all my life to various degrees. I feel much the same in how so many health professionals don’t know what they are talking about in that area, and do not know how to mesh the emotional with the nutritional needs in terms of how to approach recovery. Whenever you cover those topics on your podcasts, I have these moments of “Yes!!! Leigh gets it, and then oooooohhhh, now I get it….” so thank you Leigh!!
